Hand-made in the Kyoto countryside, these VG-10 knives are the work of lifelong smith Matsunaga-sama.
Matsunaga has chosen to leave the forge's finish on the steel, with a lustrous silver patina and a beautiful transition from a thick tang to a thin blade profile. The lamination line is unique to each knife.
Although new to our website, we have been using Matsunaga's VG-10 knives at home and in the workshop lunch room for about 18 months. We have found them easy to maintain, easy to sharpen and delightful to use.
As with all Japanese knives, we strongly recommend sharpening with waterstones. The VG-10 edge will not rust like a simpler high-carbon steel, however, washing your knife after use and drying it properly is the best way to ensure it gives you a lifetime of use
The magnolia handle is an oval shape with plastic bolster, and the knife has been hand-engraved by the smith.
