Description
Description
This double-bevel carving knife can be used ambidextrously cutting both towards and away from the user. It uses a laminated blue paper steel (aogami #2) cutting edge laminated between two softer layers of steel.
The edge itself is straight, acutely angled along the steel of the blade. Because of this, the very tip of the knife is able to make very fine cuts in tight places. However, it also doesn't receive the support of the laminating steel as the rest of the edge does, and so care needs to be taken as the tip is relatively vulnerable.
The handle is cherry, measuring 180mm. Overall length of the knife is 210mm, with the cutting edge itself measuring 20mm.
