Professional Knife Sharpener Nari Watabe-san of Hazuki Sharpening

Knife sharpening is a subject we get asked about a lot here at JTA. That is why we are very pleased to announced that Hazuki Knife Sharpening (aka Nari Watabe-san) will be basing himself in our Kogarah workshop one day a week (usually Tuesdays).

Meet Nari-san

We have been very fortunate to be able to ask Nari plenty of questions about his approach to sharpening recently, and his answers have been so thoughtful, practical and based in experience that we are thrilled he will be sharpening in our shop on a regular basis.

Nari is a member of Japan Hocho Togi Association, a Japanese organisation focused on teaching and expanding the knowledge traditional waterstone sharpening around the world. 


How to Engage Hazuki Knife Sharpening

Nari-san's professional services are available to anyone with a knife that they would like to have sharpened to the greatest extent possible. Nari-san's work is costed by the length of your knife's blade at $1/cm. We think that is phenomenal value. 

The Basic Sharpening Service is comprehensive and includes;

  • Sharpening
  • Minor Repairs
  • Chip removal
  • Broken tip repair
  • Rust removal
  • Straightening
  • Re-profiling blade line
  • Re-establishing edge geometry

An additional fee may apply when significant work outside of this Basic Sharpening Service is required. An extensive catalogue of more advanced repairs and restorations can be found here.

We have found Nari's skills and knowledge utterly impressive, and a great help in our own sharpening. If you are in the shop on Tuesdays, he will also be happy to answer any questions you may have on knife sharpening.
