For knife maintenance, we recommend only hand washing Japanese knives (avoid dishwasher) and not soaking for long periods to maintain handle timber and bolsters, and finally dry throughly before storing. 

Avoid cutting on steel, stone or glass surfaces.

These knives are not recommended for cutting bones or frozen foods.
